This year was my first season growing straw flower

This year was my first season growing straw flower and I will never NOT grow it now! These have just kept on blooming and looking beautiful. They dry beautifully (I’m very excited to try my hand at dried floral wreath with these) and they last forever in a vase with water. If you’re looking for a new flower to try next spring this is it!

Pork Chili Verde Burritos 🤤
Our family fell in love with this meal on a trip to Colorado and we’ve been making it in different iterations ever since. What I love most about this meal is its versatility. This dish can go as homemade or convenience-quick as you need. My favorite way is to smoke a huge pork shoulder, pop that into food savor bags for the freezer and use that in my pork chili verde. I’ve come down to the end of my freezer meal prep and I needed a quick fix for this meal on a busy week. Sam’s club to the rescue with their pre-prepared pulled pork! Last night I made Chicken and Dumplings and Apple

Last night I made Chicken and Dumplings and Apple Crisp for dinner. Clearly we are trending toward comfort food 😂 I’m doing all of our cooking on the grill. The apple crisp was no exception but it was the bomb.com so here is my “Hurricane Helene Grill Apple Crisp”

Ingredients
* 6-7 apples peeled and chopped sliced
* 2 Tbsp granulated sugar
* 3/4 tsp ground cinnamon
* Juice from 1 lemon
* 1 Tbs of butter for the skillet
topping
* 1 cup light brown sugar
* 3/4 cup old fashioned oats
* 3/4 cup all-purpose flour
* 1 tsp ground cinnamon
* pinch of salt
* 1/2 cup cold unsalted butter diced into small cubes
Instructions
apple filling
* In a mixing bowl, add sliced apples, granulated sugar, 3/4 tsp of the cinnamon, lemon juice and a splash of water (because we need to cook this down a bit the water will help) Stir to combine.
* Place a large skillet on the side burner of the grill and melt 1 TBS of butter over medium high heat.
* Once the butter is melted pour the spiced apple mixture into the skillet and sauté, stirring often until the apples soften. I turned the fire down to medium and used a lid during this step and the apples softened up pretty quickly.
* Once the apples are soft (the consistency they would be in a “cooked in the oven” apple crisp remove the skillet from the fire and pour the apples and their yummy juices into a baking dish and set that aside.
* Next turn the fire off to the side burner of the grill and fire up the main grill itself. You’ll want the grill temp to reach and hover around 400 degrees.
* While the grill reaches its temperature go ahead and make the crumbly topping. 
Make topping
* In a mixing bowl, add topping ingredients: brown sugar, oats, flour, 1 tsp cinnamon, salt, and diced cold butter.  
* Use a pastry cutter or a fork to cut the butter into the oat mixture, using a downward twisting motion, until mixture resembled pea-sized crumbs.
* Next add the crumbly mixture to the top of the apples in the baking dish. 
Bake
* Place the baking dish in the grill and close the lid.
* Let the apple crisp “bake” inside the grill for 10-15 minutes or until the apples are bubbly and the butter in the topping has melted and crisped up.

Hurricane Helene got us. My husband and brother in law took these photos while checking out the area around where we live. Thankfully we live up on the mountain where flood waters can’t reach us but none of us are unaffected by power outages, road closures and down trees. Our family is very fortunate, the extent of the damage we’ve suffered is a broken car window; some people have lost basically everything. We are thankful that we’ve been able to help our neighbors and friends with food, chainsaw support, gas and trips out to the store. We do feel a bit more prepared than most for this sort of thing, I told Alex it’s because we “practice being homeless” multiple times a year AKA we go camping and we have a lot of gear that supports “living off the land.” However I will say that freezer meals and bulk pantry supplies have been the hero of the day around here - so naturally that will be a soapbox I’ll never step off of. If you’ve been affected by the storm we are praying for you! Stay safe!!
